Crumb Cakes for CURE

Carol Rumsey bakes a mean crumb cake. No family gathering, neighborhood party or church event is complete without one.

After taking note of how popular her cakes were, her husband, Jim, came up with a novel idea: Make the cakes as a way to raise support for CURE.

Jim and Carol both have a deep connection with the organization. It started in 2007 while they were living in Kijabe, Kenya, serving as dorm parents at the Rift Valley Academy. Jim, a physical therapist, volunteered at the nearby AIC-CURE Children’s Hospital.

Then, they had a memorable visit at the CURE Ethiopia hospital last summer. “I got to be just inches away from a number of surgeries,” said Carol. “I watched clubfoot surgeries and cleft lip surgeries. They are doing wonderful and amazing work at the hospital.”

Now, back to those crumb cakes.

Carol and Jim started spreading the word about their CURE crumb cake project at Jim’s office and to their friends. The response was amazing.

People have made donations of $75, $100, $200 and most recently, $500, to enjoy one of Carol’s cakes. (One of her cakes, by the way, serves 24 people.)

“I never could have guessed that the response to this idea would have been as strong as it has been. It is a privilege and honor to make these crumb cakes knowing that they are being used to support such a wonderful cause,” Carol said with a smile. “CURE is a wonderful ministry. We’ve been fortunate to see this firsthand. We are proud to support them both financially and through our prayers. I’m really glad my crumb cakes can play a small part in healing a child as well!”

Carol hopes this is just the start of her CURE crumb cake project. While she’s not sure where it’ll go, she knows her cakes will make a lot of people smile, both here and all over the world.
